Blueberry Cookies


We are in love with blueberries and would like to share this cookie recipe with you.

Blueberry Cookies

yield 20-22

Preheat oven to 350

prepare 2 cookie sheets with silpats or parchment paper

ingredients:

1 cup sugar or stevia

1/2 cup butter or olive oil

4 oz cream cheese

1 egg

1 1/2 tablespoons lemon juice

2 1/2 cups flour

1 teaspoon baking soda

2 teaspoon corn starch

1/4 teaspoon salt

2 cups fresh blueberries

Mix sugar with butter, cream cheese, egg and lemon juice. Beat until fluffy.

Add remaining dry ingredients.

Gently fold in blueberries.

Using a 3 tablespoon ice cream scoop, scoop dough on to prepared cookie sheets.

Bake at 350 for 10-15 minutes. Do not let them get too brown.

Frosting:

1 cup powdered sugar

1 tablespoon cream

1 tablespoon lemon juice

Mix all and drizzle over cookies.

Refrigerate and enjoy.
